Cooking quick reference
Mostly a reference for me, but some may find this useful.
Spice mixes
Cajun
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 ½ teaspoons paprika
- 1 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 ¼ teaspoons dried oregano
- 1 ¼ teaspoons dried thyme
- ½ teaspoon red pepper flakes (Optional)
Recipes
Quick pizza sauce
Makes enough for two pizza bases.
Ingredients:
- 1 large jar (690g) passata
- 2 tsp Italian herb blend
- 1 onion, finely chopped
- 3 cloves garlic, crushed
Method:
- Heat olive oil in a sautee pan. When hot, add the onion and garlic. Fry the onions until soft and just beginning to turn brown.
- Add the passatta and Italian herbs. Bring to the boil.
- Reduce the heat to medium-low and simmer. Stir occasionally to keep the sauce from boiling.
- When the sauce has reduced and thickened, remove from the heat.
- Leave to cool and spread on the pizza.
