Cooking quick reference

Mostly a reference for me, but some may find this useful.

  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 ½ teaspoons paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 ¼ teaspoons dried oregano
  • 1 ¼ teaspoons dried thyme
  • ½ teaspoon red pepper flakes (Optional)

Makes enough for two pizza bases.

Ingredients:

  • 1 large jar (690g) passata
  • 2 tsp Italian herb blend
  • 1 onion, finely chopped
  • 3 cloves garlic, crushed

Method:

  1. Heat olive oil in a sautee pan. When hot, add the onion and garlic. Fry the onions until soft and just beginning to turn brown.
  2. Add the passatta and Italian herbs. Bring to the boil.
  3. Reduce the heat to medium-low and simmer. Stir occasionally to keep the sauce from boiling.
  4. When the sauce has reduced and thickened, remove from the heat.
  5. Leave to cool and spread on the pizza.
